Biography

Rocío Alejandra Chávez-Santoscoy, PhD, is an Associate Research Professor at Tecnológico de Monterrey, Campus Monterrey, where she founded the Core Lab Genomics, a multidisciplinary research platform focused on advancing omics-driven approaches for precision nutrition, functional foods, and systems nutrition.

Her research lies at the frontier of nutrigenomics, multi-omics integration, and functional food innovation, aiming to understand how bioactive food compounds interact with human metabolic pathways and complex biological systems. Her work combines molecular nutrition, nanobiotechnology, and computational omics approaches to investigate the functional effects of phenolic compounds and nutraceuticals using in vitro, in vivo, and clinical research models.

A distinctive aspect of her research program is the sustainable valorization of agro-industrial by-products to develop next-generation functional ingredients and health-promoting foods. By integrating nanotechnology with multi-omics data analysis, her research contributes to the development of sustainable, evidence-based nutritional strategies to address major global challenges related to chronic disease prevention, metabolic health, and food system sustainability.

Dr. Chávez-Santoscoy is an active member of the International Bionanotechnology Network, where she collaborates on interdisciplinary initiatives focused on food sustainability and innovative bio-based technologies. Her pioneering work on the development of functional bread formulations targeting chronic diseases has received international recognition, including being named one of the Innovators Under 35 Latin America by MIT Technology Review (2017).

Beyond her research contributions, Dr. Chávez-Santoscoy is a strong advocate for scientific leadership, innovation, and inclusive excellence in STEM. In 2021, she founded the Mexico National Chapter of the Organization for Women in Science for the Developing World (OWSD) and currently serves promoting initiatives to strengthen gender equity, leadership opportunities, and participation of women in science and technology across Latin America.

She is also deeply committed to mentoring and training the next generation of scientists, supervising students at both undergraduate and graduate levels. Through her research, leadership, and community engagement, she continues to advance frontier science at the intersection of nutrition, omics technologies, and sustainable food innovation.
